There is a rapidly growing field in urban studies that focuses on networked infrastructure, especially the infrastructures underlying modern cities. While electricity, subways, and water supplies are the kinds of complex social-technological-environmental networks that have attracted urban historians, the importance of infrastructure to food, provisioning, and culinary networks in urban and rural settings has been largely overlooked. This special issue of Global Food History on Culinary Infrastructure will offer food historians a platform to redress this lacuna.
